This is another of my mom’s recipes. I’m not sure of its origin. On the first semi-snowy day of the year, it seemed like a perfect time to bake. Without fail, cooler weather brings out the baker in me! And this dessert makes the whole house smell so nice!

Here’s the recipe!

apple mixture:

4 apples
1/2 cup sugar
3 teaspoons cinnamon

Peel apples. Grate, slice, or cut apples into cubes. Put them in a bowl. Stir in sugar & cinnamon. Set aside.

batter:

3 cups flour
1 cup sugar
3 teaspoons baking powder
1 cup vegetable cooking oil
4 eggs
1/4 cup orange juice
2 1/2 teaspoons vanilla

Put all of the above in a bowl. Mix until smooth.

Grease a pan (lasagna pan). Put 1/2 batter in. Put 1/2 apple mixture in. Spread. Put remaining batter in. Put remaining apple mixture in. Lightly spread. Top with extra cinnamon, if desired.

Bake at 350 degrees for 45-60 minutes. Serve warm or cold. Is great warm with vanilla ice cream & whipped cream!
